Although it comes in different shapes and thicknesses, it doesn't present any problems when cooking.
Corn flour; rice flour; corn starch.
Use a large pot with plenty of water: no less than 3 liters per 500 g.
When it first boils, add about 5 g of coarse salt per liter of water and, when it comes to a lively boil, lower the heat to compensate for the drop in temperature.
Boiling time: maximum 5 minutes.
Use a wooden utensil to stir them as soon as they are lowered into the water (the flat surface helps them stick together) and occasionally during the 5 minutes of high boiling.
Turn off the heat and leave them in the cooking water, covered, stirring occasionally, until they are tender. They are not considered to have reached the desired level of cooking.
Store in a cool, dry place.
