Farabella Xanthan Gum, used as a thickener and stabilizer, is particularly suitable for gluten-free doughs for various food products as it helps to give consistency.

Characteristics

Gluten-free flours do not mix well because the glue that holds them together is missing: gluten.
This is why, if you knead GF flour, it is not uncommon to end up with a crumbly and hard mixture, very difficult to work even if you have used the amount of water called for in the recommended recipes: xanthan gum acts by making the dough soft, uniform and workable.
