Characteristics

A masterpiece of traditional cuisine throughout Emilia Romagna, they are so called because the rolled out dough is "cut" into many strips about 7-8 millimeters wide. They are seasoned with classic Bolognese or Romagna-style ragù, with butter and raw ham.
