Gluten-free egg tagliatelle.
A masterpiece of traditional cuisine throughout Emilia Romagna, they are so called because the rolled out dough is "cut" into many strips about 7-8 millimeters wide. They are seasoned with classic Bolognese or Romagna-style ragù, with butter and raw ham.

We recommend cooking for 7/9 minutes. To ensure it is cooked to your liking, we recommend tasting it several times before removing it from the heat. If you want to stir-fry it with your chosen sauce, drain it a few minutes before the indicated time and add a little cooking water.
