Calamarata is another of the pasta shapes typical of the Campania food and wine tradition. This pasta shape, in fact, closely resembles paccheri, from which it takes its shape. Its name, however, comes from its resemblance to calamari rings, with which it is often served.

There is only one recipe that can truly do justice to this pasta: it is calamarata pasta. A typical Neapolitan dish, based on just a few ingredients: tomatoes and calamari rings. The combined use of gold dies and a slow drying process at low temperatures give the pasta just the right amount of porosity, perfect for absorbing any sauce. In fact, Neapolitan calamarata isn't the only recipe used to prepare this type of pasta. It is also paired with various types of fish, from seafood to swordfish. Some also use calamarata for meat dishes. Either way, this is definitely a pasta dish worth trying at least once!
